Homemade Mincemeat Tarts

Cooking Time: 90 minutes
Serves: 12 Slices

250g apples (approx 2), grated or finely chopped
200g dried fruit (use a mixture of sultanas, currents, cherries, cranberries etc.)
25g sliced almonds
½ orange, zest and juice
½ lemon, zest and juice
¼ tsp mixed spice
¼ tsp cinnamon
1tbsp rum or brandy (if you don’t want to use alcohol then just add an extra tbsp of juice)
100ml apple juice

250g plain flour
125g polyunsaturated margarine
Juice of ½ orange and ½ lemon (make up to 65ml with water if necessary)
Zest of ½ orange and ½ lemon (chopped finely)


Chop all dried fruit so that all the pieces are a similar size.
Put grated apples, chopped almonds, orange & lemon zest, mixed spice and cinnamon in a large mixing bowl.
Mix together well and add rum or brandy, lemon, orange and apple juice.
Leave to sit in the refrigerator overnight, but also stir regularly.

Sift flour into a bowl.
Cut up margarine into cubes.
Rub the margarine into the flour with your fingertips until it resembles fine breadcrumbs.
Stir in zest and then add juice and water.
Mix with a knife until the mixture comes together and you can turn it out onto a floured board.
Kneed briefly then put in refrigerator to rest for 1hr.

Roll out the pastry quite thinly and line a shallow baking tray measuring approx 25cmx20cm
Trim the edges.
Place the mincemeat in the pastry case.
Roll out the remaining pastry and cut long thin strips so that you can place over the mincemeat in a lattice fashion. (Place all the strips laying in one direction, then place further strips at right angles. Brush the pastry with a little milk to help it stick)
Brush the pastry with a little milk before placing in a hot oven (180 degrees C) for approx 25 mins.
Cool for about ½ hour and then cut into 12 slices.
